Memoris is so named as a tribute to Maurice Baillette; in the words of Laureen herself “Memoris is a tribute to my grandfather: Memory + Maurice = Memoris. But this cuvée is also a tribute to my father.”
Memoris is made largely of perpetual reserve wines - specifically a reserve started by Laureen's father, hence this Memoris completion is a also a tribute to him.
Another interesting differentiator for this bottle - the riddling for this was done by hand. Riddling is done during the second stage of fermentation for champagne. The wine is bottled with yeast for fermentation and very slowly rotated over months or years. Usually this is done by a machine for both ease and precision but some houses, like Baillette-Prudhomme will feature some done the old fashioned way, by hand.
Grapes: 100% Pinot Noir
Vinification: Enamelled and stainless steel vats, reserve wine stored in oak barrels
Aroma wise the reserve wine comes into play - we got sweet, spicy notes and some caramel.
Tasting it we found lots of delicious almond and dried fruit flavours - think golden raisins and similar.
Memoris works well with a poultry dish or as the perfect accompaniment to an after dinner cheese course.
