This bottle is a reflection of the Levasseur vineyards’ northern location and cooler, oceanic climate.
Don’t be fooled into thinking that this wine is sharp - it is bright, light, fresh and makes a brilliant accompaniment to all sorts of food.
We recommend tasting one glass unaccompanied so to experience the 0g dosage and then move on to pairing with your meal of choice. This way you can see how the develops. We found that food softens out the natural taste of the champagne - we particularly enjoyed it with cheese.
Process: Completed Malo-lactic fermentation and aged on lees for 4 years
When smelling - red Berry (Cherry, wild strawberries) Yellow apples, apricot, peach and crystallized fruit
During tasting we found that there is a difference in the mouthfeel due to no additional sugar but overall a pleasantly low acidity. We found yellow stone fruits - peach and apricot (fresh, slightly unripe). Also; hints of ginger, honey and a minerally saline quality.
As mentioned above, try a glass without food to experience the 0 dosage and then move onto a meal of your choice. Notice how the flavours change!
